Ingredients
12 x Naked Rivals Lime Juice Cubes
4 x Naked Rivals Lemon Juice Cubes
500g Prawns, peeled and deveined.
¼ medium Red Onion, finely minced
1 cup diced Cucumber
2 Chili Peppers like Serrano or Jalapeno, deseeded and minced
2 tblsp chopped Coriander
1 medium Avocado, diced
Method
- Pop Naked Rivals Lime Juice Cubes and Naked Rivals Lemon Juice Cubes into a medium non-reactive bowl (glass, stainless steel, and ceramic bowls are perfect).
- Cut prawns into small pieces (no larger than ½ inch) and mix into the bowl with the Lime and Lemon Juice. Refrigerate for 30 mins or until the prawns are “cooked” through.
- Add the cucumber, onion, minced chili peppers, coriander, and a pinch of salt. Toss well, and then press the prawns down into the liquid as much as possible. Cover and refrigerate for at least 30 minutes and up to 4 hours.
- Just before serving, stir in the avocado. Taste, and then season with salt and pepper if you feel it is necessary.
Note:
For a spicier ceviche, leave some or all of the seeds of the peppers. Or add a few dashes of your favourite hot sauce.
