Naked Rivals

Prawn Ceviche

Ingredients

12 x Naked Rivals Lime Juice Cubes
4 x Naked Rivals Lemon Juice Cubes
500g Prawns, peeled and deveined.
¼ medium Red Onion, finely minced
1 cup diced Cucumber
2 Chili Peppers like Serrano or Jalapeno, deseeded and minced
2 tblsp chopped Coriander
1 medium Avocado, diced

Method

  1. Pop Naked Rivals Lime Juice Cubes and Naked Rivals Lemon Juice Cubes into a medium non-reactive bowl (glass, stainless steel, and ceramic bowls are perfect).
  2. Cut prawns into small pieces (no larger than ½ inch) and mix into the bowl with the Lime and Lemon Juice. Refrigerate for 30 mins or until the prawns are “cooked” through.
  3. Add the cucumber, onion, minced chili peppers, coriander, and a pinch of salt. Toss well, and then press the prawns down into the liquid as much as possible. Cover and refrigerate for at least 30 minutes and up to 4 hours.
  4. Just before serving, stir in the avocado. Taste, and then season with salt and pepper if you feel it is necessary.


Note:

For a spicier ceviche, leave some or all of the seeds of the peppers. Or add a few dashes of your favourite hot sauce.
