Dressing:
4 X Frozen cubes of Naked Rivals Lemon Juice
5 Tbs Extra Virgin Olive Oil, Plus Extra for Drizzling
2 Red Chillies, Deseeded and Chopped
2 Tbs Chopped Oregano Leaves
½ Tsp Sea Salt
A Handful of Basil Leaves, Roughly Torn
Skewers:
Skewers
400g Raw Peeled Jumbo King Prawns
3 Garlic Cloves, Finely Chopped
400g Cherry Tomatoes
Method
Dressing:
- Add all ingredients excluding the basil to a jar, close and shake until all the ingredients are integrated. Stir in basil.
Skewers:
- Place the prawns in a large bowl. Pour half the marinade over the prawns, add 3 garlic cloves and mix. Cover and chill for 30 minutes.
- Soak 20 wooden skewers for 20 minutes. Preheat the barbecue. Quarter the tomatoes; put in a bowl with the remaining marinade; season and toss.
- Alternate threading the prawns and tomatoes onto each skewer. Season with salt and pepper.
- Cook the prawns on the barbecue (or a preheated griddle pan) for 3-4 minutes, turning, until pink.
- Transfer to a platter; spoon over the remaining marinade.
Handy Tip: If the lemon cube hasn’t melted through, don’t worry, just put the jar aside while you prepare the salad and then give the jar a shake before you serve.
