Ingredients
200g chilled watermelon, sliced
Small mint leaves to serve (optional)
GRANITA
375ml (1½ cups) water
165g (¾ cup) caster sugar
16g mint leaves on stem
9 cubes of Naked Rivals lime juice, thawed
Method
- For the Granita, combine water and sugar in a medium saucepan and stir over medium heat until sugar dissolves and mixture is warm. Remove from the heat.
- Add mint and press to submerge. Set aside to infuse for 15 minutes.
- Remove mint and discard. Add lime juice and stir well.
- Transfer mixture to a small deep tray. Freeze for 3-4 hours or until solid.
- When ready to serve, place watermelon on serving plates. Use a fork to scrape the surface of granita into fine ice crystals. Working quickly, top watermelon with granita and a few small mint leaves if liked.
Storage:
Store granita in the freezer for up to 2 months.
Handy Tip:
For a boozy adults-only version, add ¼ cup of your favourite summer spirit to the mix before freezing – gin, tequila or rum work nicely.
